  • Cold press coconut oil – 1 tablespoon
  • Mustard seeds – 1 teaspoon
  • Urad dal/Split washed black gram – 1 teaspoon
  • Chana dal/Split Bengal gram – 1 teaspoon
  • Asafoetida/Hing – ¼ teaspoon
  • Green chili – 2-3 (finely chopped)
  • Dried red chili – 2 (whole)
  • Curry leaves – 8-10
  • Beetroot – 2 medium-sized (small diced)
  • Turmeric – ½ teaspoon
  • Salt – 1 teaspoon
  • Water – ¼ cup
  • Coconut – ¼ cup (shredded)
  • Dulse – 1 teaspoon

Preparation time: 30-40 minutes

  • Take a pan and heat it
  • Add oil and mustard seeds
  • Let them crackle
  • Now add urad dal,chana dal and roast them till they become light brown
  • Add asafetida, curry leaves, green chili, and red chili for that extra punch of flavors
  • Now add the star of the recipe, i.e., beetroot
  • Add salt, turmeric, and water
  • Mix everything together
  • Cover it with a lid
  • Let it cook for 8-10 minutes on medium flame
  • Open the lid and stir it
  • Check if the beetroot pieces still feels firm
  • Again, cover it with a lid
  • Let it cook for 4-5 minutes on medium flame
  • Open the lid and stir it
  • Make sure that all water is absorbed
  • Now add shredded coconut and dulse
  • Mix everything together
  • Your beetroot poriyal is ready
  • Serve it and top it with some coconut
