Tofu Bhurji Recipe – Vegan Indian Scrambled Tofu

 Ingredients 

  • Oil- ½ tablespoon
  • Cumin seeds- 1 teaspoon 
  • Methi Dana (fenugreek seeds)- 2 teaspoons (sprouted)
  • Onion – 1 large or 2 medium (finely chopped)
  • Tomato- 1 large or 2 medium (finely chopped)
  • Green chili – 1 (finely chopped)
  • Red chili powder- ½ teaspoon 
  • Turmeric powder- ¼ teaspoon 
  • Salt – As per taste
  • Coriander powder- 1 teaspoon
  • Tofu- 100 grams 
  • Coriander leaves – ¼ cup (chopped)

Preparation time– 15-20 minutes 

Cooking time- 20-30 minutes 

Instructions 

Few quick and simple instructions and boom! Your Tofu Bhurji will be ready. Don’t worry if cooking is not your forte, the steps described below are easy to follow. 

  1. Heat a pan 
  2. Add oil to it 
  3. Once the oil gets hot enough, add cumin seeds 
  4. Wait for the cumin seeds to splutter 
  5. Now add sprouted fenugreek seeds for extra nutrition 
  6. Add finely chopped onions and let them turn brown 
  7. Now add finely chopped tomatoes and some green chili
  8. Add all the spices, i.e., salt, coriander, turmeric and red chili powder 
  9. Stir the ingredients and cover with the lid  
  10. Wait for the spices to get cooked 
  11. Now add the special ingredient that is Tofu 
  12. Your Tofu Bhurji is ready 
  13. Don’t forget to garnish with coriander while serving
