Stuffed eggplant is the most liked recipe by Indians. No matter how weird the faces we make at the name of brinjal but when Stuffed eggplant is prepared we forget all about our not-so-good relationship with brinjal. The recipe is very healthy and vegan as well. The recipe will be so tasty that you will definitely eat one extra roti. Let’s start with the ingredients first:
Ingredients
- Coriander powder – 1 teaspoon
- Fennel powder – 1 teaspoon
- Ginger – ½ teaspoon (grated)
- Cayenne pepper – ½ teaspoon
- Green chilly – 1 (chopped)
- Rock salt – 1 teaspoon
- Turmeric powder – ¼ teaspoon
- Mango powder – ½ teaspoon
- Eggplant – 1
- Cold-pressed coconut oil – ½ teaspoon
- Cumin – 1 teaspoon (powdered)
- Asafoetida – ¼ teaspoon
- Coriander leaves- ½ cup
Instructions
- First, we need to make masala to fill in the eggplant. To make masala take a bowl and add one teaspoon of coriander powder, one teaspoon of fennel powder, Ginger- ½ teaspoon (grated), Cayenne pepper- ½ teaspoon (powder), Green chilly- 1 (chopped), Rock salt- 1 teaspoon, Turmeric – ¼ teaspoon (powder), Mango powder- ½ teaspoon. Make sure you mix everything perfectly; otherwise it will be messed up.
- Take a big eggplant, wash it and make two cuts that are diagonal to each other. The cuts should not be intense and must divide the eggplant into four pieces. The eggplant must remain stuck from the bottom. You can take as many eggplants as required.
- Rub the masala in between the cuts in a proper manner.
- Now heat an iron cast pan. Take a nonstick pan; otherwise, it will stick to the bottom.
- Add ½ teaspoon cold pressed coconut oil to the pan. Heat it for a good time and add cumin- 1 teaspoon (powder), Asafoetida – ¼ teaspoon, along with the eggplants.
- Cook the eggplant from each side for five minutes. In case it burns, add some drops of cold-pressed coconut oil to it. Make sure it is just a few drops.
- You can add the leftover masala in the end and cook for 2-3 minutes again.
- Add ½ cup of coriander leaves to the masala eggplant.
- Serve your hot masala eggplant with roti or rice.
