Ingredients

  1. Cold pressed coconut oil – 1 tablespoon
  2. Onion – 2. medium (finely chopped)
  3. Salt – 1 teaspoon
  4. Tomatoes – 2, medium (finely chopped)
  5. Green chilly – 1 (chopped)
  6. Cayenne pepper – 1 teaspoon
  7. Coriander powder –  ½ tablespoon
  8. Eggplant/Baigan – 1 (roasted, peeled, and mashed)
  9. Moringa powder – ½ teaspoon
  10. Coriander leaves – ½  cup (chopped)

Preparation time: 20-30 minutes

Instructions

This yummy bharta is very easy to make and brings a heap of nutrients to your plate. So let’s begin with the instructions.

  • First, we need to roast the eggplant 
  • Before roasting coat the eggplant with a layer of oil 
  • Now place a metal ring over your cooktop and put the eggplant over it 
  • Roast it evenly from all the sides 
  • Once roasted, let it cool down 
  • Now  peel off its skin and mash it properly 
  •  Now, take a pan and heat it
  • Add cold-pressed coconut oil to the pan
  • Add chopped onion
  • Add salt and sauté it until it is golden brown 
  • Add tomatoes, green chilly, cayenne pepper, and coriander powder
  • Mix everything together
  •  Now cover the lid and let it cook for 2-3 minutes
  • Remove the lid and give it a stir
  • Add the mashed eggplant
  • Mix well again and cook for 2-3 minutes 
  • Now, turn off the flame 
  • Add moringa powder and coriander leaves 
  • Mix and mash until all the flavors are combined
  •  Your baigan ka bharta is ready to be served
